Lime Ice Pop


I have realized that not everyone shares my love of lime and chile on almost everything (and a lot of it), but I’m sure I will get some who will really enjoy this one. Growing up my top two paletas (ice pops made with fresh fruits) were coconut and lime. Here’s a recipe for a refreshing lime pop and a coconut or spicy pineapple recipe will be following soon(-ish). If you don’t have really cool molds like I do then you can always use a cup and stick a fork in the middle after it has been in the freezer for about an hour.

*If you have extra mix then keep it in the refrigerator and refill the molds as you take them out.


2 cups water

2/3 cup sugar

3(1-inch) strips of lime zest

¾ cup freshly squeezed lime juice (about 10)


  1. Place water, sugar and lime zest into pot and heat until sugar dissolves.
  2. Remove zest and let cool to room temperature.
  3. Mix in lime juice.
  4. Place in molds and freeze.

*This recipe yielded too much for me so I halved it.
