Mango Fried Rice With Veggie Chunks

Ingredients:
1/2 cup veggie chunks
1 green pepper, finely diced
2 garlic cloves, minced
1 tablespoon minced fresh ginger
1 teaspoon oil
2 cups cooked rice
Salt and pepper
2 eggs, beaten
3 scallions, thinly sliced
1 large ripe mango, peeled and chopped

Directions
Soak veggie chunks in hot water for ½ hour. Drain, cool and squeeze out all the water.

Add veggie chunks to frying pan on medium heat and add green pepper, garlic, minced ginger and oil, stirring occasionally for 8 to 10 minutes.

Stir in cooked rice. Taste and season with salt and pepper.

Pushing rice mixture to one side, scramble beaten eggs in pan until set. Add scallions and mango, tossing gently. Makes 2 servings.

NOTE: I used veggie chunks, but tofu would also work well with this recipe.

TIPS:
*Prepare all ingredients ahead of time
*More oil may be necessary during the cooking process
*2-4 smaller mangos can be used instead of one large mango
