1 ¼ cup corn meal
1 ¼ cup flour
¼ cup sugar
1 can sweet corn (If you don’t add sweet corn, add enough milk or water to make batter. Not to soupy though, you want it to be kind of thick.)
1 tblsp baking powder
1 tsp salt
Mix all ingredients in mixing bowl. The water from the can of corn will provide all the liquid you need for the batter. Mix well.
Heat enough oil to cover the bottom of a large skillet over medium-high heat. The batter should immediately start cooking when you place it in the skillet.
Spoon in the batter. You can make them as small as you want but don’t make them to big so they will cook all the way through. This recipe makes 12-24 depending on how big your spoon is.
Cook on both sides until golden brown.
