Pineapple Chicken Curry and Rice Soup

1 small Onion (diced)

1 green pepper (diced)

1 small carrot (diced)

Olive Oil

2 Cups of Pineapple Juice

1 tsp of Cumin

3 tsp of Yellow Curry

3 Chicken Breasts (cubed)

1.5 Cups of Chicken Stock

2 cups Water

1 cup Jasmine Rice

1 tbl Butter

Salt and Pepper

In a pot add olive oil and diced carrots, let cook for 2-3 mins. In another pot cook jasmine rice according to package. Add butter to water. Do NOT cook all the way half way through remove from heat. Set aside. Add diced onion and peppers to carrot pot and cook for 2-3 more minutes or until the onion is soft. Add cumin and curry powder to pot and then add 1 cup of pineapple juice. Allow juice to cook down for 3-4 mins. Season chicken with salt and pepper. Add Chicken to pot along with chicken stock allow to cook for 3-4 mins. Add Rice, the rest of the pineapple juice and water to pot. Allow to simmer for 10 mins. Enjoy! 😀
