– 2 c. coconut milk (one packet or one can)
– 1-2 Tbsp tomato paste
– 2 cloves garlic, grated
– thyme, oregano or rosemary (optional)
– salt, pepper to taste
1. Add coconut milk and tomato paste to a jar.
2. Grate garlic into the jar, add herbs, salt and pepper.
3. Shake the jar until ingredients are well mixed, stirring to ensure the tomato paste is fully incorporated.
**Serve with salad, lentils, or raw veg. **
