Chocho, tomato, and onion salad

Ingredients:

2 chocho, peeled and diced
3 roma tomatoes, diced
1/2 onion thinly sliced
1/2 cup vinegar (apple or white)
1/2 cup sugar
1/4 cup water
1/4 cup oil (olive, coconut, vegetable)
1 teaspoon salt
1 teaspoon pepper
Couple shakes of garlic powder or some fresh garlic

Directions:
Mix everything together and Enjoy! The longer it sits to better it will taste!
Eat with chicken, tuna, rice, pasta,  anything really!
